The Beginning
We came to a ridge above the Baltic Sea with a simple intention — brew some tea. The tent filled with strangers sheltering from the rain, and seeing it packed warmed us more than the stove did.

The first year. We came to a ridge above the Baltic Sea on the Danish coast, at a place called Boesdal, with a simple intention: brew some tea.

On the Tuesday it rained heavily, and we lit the stove and made chai. The tent filled up with people sheltering from the weather, and seeing it packed with strangers warmed us more than the stove did.

We had a sweeping view over the ocean from that ridge — the whole sea laid out in front of us. On the Thursday we served tea at the Cabaret night, and on the Friday we had a sunny outdoor serving that felt like something close to perfect.

That year we served matte, sencha, mint tea, and chai — teas that have remained part of our menu ever since. We also ran a fermentation lab and held a drum circle, which set the tone for the kind of camp we wanted to be: curious, hands-on, and slightly unusual.
